Method
- Preheat the oven to 425°F (220°C).
- Wash and cut red onion, tomatoes, and zucchini into uniform sizes.
- Drizzle olive oil over vegetables and sprinkle with oregano, salt, and pepper. Toss to coat.
- Spread seasoned vegetables in a single layer on a baking sheet.
- Roast for about 30 minutes, or until tender and caramelized.
- Remove from oven and crumble feta cheese over hot vegetables.
