  • 1 Tbsp Oregano Key seasoning for Mediterranean flavor
  • 1 medium Red Onion Substitute with yellow onion if desired
  • 2 medium Tomatoes Bursting with flavor when roasted
  • 2 medium Zucchini Can be swapped with eggplant or sweet potatoes
  • 1 cup Feta Cheese Feel free to use vegan cheese as a substitute
  • 1/2 cup Olives Can replace with capers if preferred

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. Wash and cut red onion, tomatoes, and zucchini into uniform sizes.
  3. Drizzle olive oil over vegetables and sprinkle with oregano, salt, and pepper. Toss to coat.
  4. Spread seasoned vegetables in a single layer on a baking sheet.
  5. Roast for about 30 minutes, or until tender and caramelized.
  6. Remove from oven and crumble feta cheese over hot vegetables.
