Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine chicken thighs, gyro spices, and olive oil. Toss until well-coated.
  3. Transfer the seasoned chicken onto a sheet pan, spreading them out evenly.
  4. Bake the chicken for about 25-30 minutes until golden brown with an internal temperature of at least 165°F (74°C).
  5. In a medium bowl, mix together cucumber, feta cheese, garlic, and lemon juice to make the feta tzatziki. Let chill for about 15 minutes.
  6. Warm pita bread in the oven during the last 5 minutes of chicken cooking time.
  7. Serve the crispy chicken wrapped in warm pita and topped with feta tzatziki.
