Step-by-Step Instructions
  1. Heat a large skillet over medium-high heat. Add a splash of oil, then sear chicken for 5-7 minutes until cooked through. Set aside.
  2. In the same skillet, add sausage and cook for 3-4 minutes until browned.
  3. Add chopped onions and bell peppers, sauté for 4-5 minutes until softened.
  4. Stir in rice and Cajun seasoning, cook for 1-2 minutes to toast the rice.
  5. Pour in chicken broth, bring to simmer, return chicken to skillet, cover, and cook for 15-20 minutes until rice is tender.
  6. Remove the lid, fluff rice with a fork, adjust seasoning as needed, and serve warm.
