- Preheat your oven to 350°F (175°C) and coat a 9x5-inch loaf pan with nonstick spray. Line the bottom with parchment paper.
- In a large mixing bowl, peel and mash the bananas with a fork until smooth. Mix in the sugar.
- Stir in the eggs, vanilla extract, and canola oil until combined.
- In another bowl, sift together the flour, baking soda, and salt. Gradually fold this into the banana mixture.
- Pour the batter into the prepared loaf pan and bake for 40-45 minutes, or until a toothpick comes clean.
- Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
