Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and coat a 9x5-inch loaf pan with nonstick spray. Line the bottom with parchment paper.
  2. In a large mixing bowl, peel and mash the bananas with a fork until smooth. Mix in the sugar.
  3. Stir in the eggs, vanilla extract, and canola oil until combined.
  4. In another bowl, sift together the flour, baking soda, and salt. Gradually fold this into the banana mixture.
  5. Pour the batter into the prepared loaf pan and bake for 40-45 minutes, or until a toothpick comes clean.
  6. Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
