  • 1 cup Fresh or Frozen Raspberries Strawberries are a great alternative.

  • 1/2 cup Sliced Almonds Pumpkin seeds or walnuts can be substituted.

Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and a 2-quart baking dish.
  2. Combine rolled oats, plant-based milk, raisins, pure maple syrup, pure vanilla extract, and ground cinnamon in the baking dish. Add ¾ cup of water and stir well.
  3. Layer the fresh or frozen raspberries and blueberries on top of the oat mixture, then sprinkle sliced almonds on top.
  4. Bake for about 40 minutes, until the edges are bubbly and golden, and the center is firm but slightly soft.
  5. Let the bake cool for 10 minutes before slicing. Serve warm with maple syrup or plant-based milk.
  6. For meal prep, assemble the night before, refrigerate, and bake in the morning for a quick breakfast.
