Prep and Cook
  1. Clean mussels under running water, scrubbing shells and discarding any that remain open.
  2. Heat vegetable and sesame oil in a large pan over medium heat. Add chopped onion, minced garlic, and grated ginger, sauté for 3 minutes.
  3. Stir in diced tomatoes and white miso, cooking for an additional 2 minutes. Gradually pour in vegetable or chicken broth, followed by fish sauce and mirin.
  4. Bring the broth to a gentle boil, then add mussels. Cover and reduce heat to low, simmer for 8 minutes.
  5. Stir mussels and cover, cooking for an additional 2 minutes until opened.
  6. Remove from heat, stir in cooking cream and unsalted butter, allow to rest for 1 minute, and adjust seasoning if needed.
  7. Serve in bowls garnished with chives and chili oil, along with crusty bread for dipping.
