Preparation
  1. Thinly slice the sirloin or flank steak against the grain. In a bowl, combine steak with chili powder, ground cumin, garlic powder, onion powder, salt, and black pepper. Toss to coat evenly.
Sauté Veggies
  1. Preheat the Blackstone griddle to medium-high heat. Add vegetable oil, then sauté bell peppers and yellow onion for about 5–7 minutes until softened.
Cook Steak
  1. Add seasoned steak to the griddle, searing for about 2–3 minutes on each side until browned and cooked to desired doneness. Remove and let rest.
Assemble Quesadillas
