Preparation
- Thinly slice the sirloin or flank steak against the grain. In a bowl, combine steak with chili powder, ground cumin, garlic powder, onion powder, salt, and black pepper. Toss to coat evenly.
Sauté Veggies
- Preheat the Blackstone griddle to medium-high heat. Add vegetable oil, then sauté bell peppers and yellow onion for about 5–7 minutes until softened.
Cook Steak
- Add seasoned steak to the griddle, searing for about 2–3 minutes on each side until browned and cooked to desired doneness. Remove and let rest.
Assemble Quesadillas
- Lower heat to medium-low, lay a tortilla on the griddle, sprinkle half with cheese, then layer cooked steak and veggies. Fold tortilla and press gently.
Grill
- Cook quesadilla for 2–3 minutes on one side until golden and cheese melts. Flip and grill other side for another 2–3 minutes until crispy.
Serve
- Remove grilled quesadillas, slice into wedges, and serve hot with toppings like sour cream, guacamole, or salsa.
