  3. Add eggs one at a time, beating well after each addition. Fold in mashed bananas, crushed pineapple, coconut, and optional extract.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually stir dry mixture into wet ingredients until just combined.
  5. Pour the batter into the greased loaf pan and smooth the top.
