  • 2 cups Yukon Gold Potatoes Cubed, no peeling needed.
  • 1 pound Lean Ground Beef Opt for 90/10% for less grease.
  • 1 medium Diced Yellow Onion Substitutes can be white or red onion.
  • 1 medium Chopped Red Bell Pepper Any color bell pepper will work.
  • to taste Kosher Salt

  • 1 can Diced Green Chiles Choose mild or hot based on preference.
  • 1 tablespoon Chili Powder Taco seasoning can be substituted.
  • 1 teaspoon Ground Cumin Coriander can be a backup.
  • 1 teaspoon Smoked Paprika Regular paprika can be used if needed.
  • to taste Cilantro Optional garnish.
  • 1-2 cups Shredded Cheese Cheddar, Colby Jack, or Pepper Jack.

Method
 

Cooking Steps
  1. Heat the avocado oil in a large skillet over medium-high heat until shimmering.
  2. Add the cubed Yukon Gold potatoes and sauté for about 6 minutes until tender and golden.
  3. Push potatoes to the side, then add ground beef, diced onion, and chopped bell pepper. Season with salt and pepper, cooking for 5-7 minutes until browned.
  4. Stir in diced green chiles, chili powder, ground cumin, and smoked paprika. Cook for an additional 2-3 minutes.
  5. Check seasoning, then sprinkle shredded cheese on top, cover, and reduce heat to low until melted (3-5 minutes).
  6. Garnish with cilantro if desired, and serve hot.
