- Preheat your grill or grill pan to medium heat, around 350°F.
- Drizzle the chicken breasts with olive oil and coat evenly. Sprinkle garlic powder, oregano, paprika, salt, and black pepper on both sides.
- Grill the seasoned chicken breasts for about 6-7 minutes on each side until the internal temperature reaches 165°F.
- Remove the chicken from the grill and let it rest on a cutting board for 5 minutes.
- While the chicken rests, slice the cucumber, halve the cherry tomatoes, and thinly slice the red onion.
- After resting, slice the grilled chicken against the grain into thin strips.
- Warm the tortillas for about 20 seconds in a skillet or microwave.
- Spread hummus on each warm tortilla, then layer with mixed greens, cucumber, cherry tomatoes, red onion, feta cheese, and chicken strips.
- Drizzle fresh lemon juice over the layers.
- Roll the tortillas tightly, folding in the sides, and cut each in half at a slight angle.
