Method
 

Step-by-Step Instructions
  1. Preheat your grill or grill pan to medium heat, around 350°F.
  2. Drizzle the chicken breasts with olive oil and coat evenly. Sprinkle garlic powder, oregano, paprika, salt, and black pepper on both sides.
  3. Grill the seasoned chicken breasts for about 6-7 minutes on each side until the internal temperature reaches 165°F.
  4. Remove the chicken from the grill and let it rest on a cutting board for 5 minutes.
  5. While the chicken rests, slice the cucumber, halve the cherry tomatoes, and thinly slice the red onion.
  6. After resting, slice the grilled chicken against the grain into thin strips.
  7. Warm the tortillas for about 20 seconds in a skillet or microwave.
  8. Spread hummus on each warm tortilla, then layer with mixed greens, cucumber, cherry tomatoes, red onion, feta cheese, and chicken strips.
  9. Drizzle fresh lemon juice over the layers.
  10. Roll the tortillas tightly, folding in the sides, and cut each in half at a slight angle.
