  • 1 teaspoon Dried Oregano can substitute with fresh oregano
For the Eggs
  • 4 large Eggs ensure they are at room temperature
To Finish
  • 1 teaspoon Crushed Red Pepper Flakes adjust according to spice preference
  • 1 teaspoon Salt needed for seasoning
  • 2 tablespoons Fresh Herbs (Parsley or Basil) for garnish; dill or cilantro works too

Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C).
  2. In an oven-safe skillet, heat extra virgin olive oil over medium heat. Add minced garlic and chopped shallots, and sauté for 2-3 minutes until fragrant.
  3. Introduce cherry tomatoes into the skillet and cook for 5-7 minutes, until they blister and become juicy.
  4. Sprinkle in dried oregano, crushed red pepper flakes, and salt. Stir for 1 minute to combine flavors.
  5. Nestle chunks of feta cheese into the mixture and simmer for 2 minutes until it softens.
  6. Create small wells in the mixture and crack an egg into each well.
  7. Transfer the skillet to the oven and bake for 8-10 minutes, until egg whites are set and yolks are slightly runny.
  8. Remove from oven and let rest for 2 minutes. Garnish with fresh herbs and a drizzle of olive oil.
  9. Serve hot alongside warm pita or crusty bread.
