- Preheat your oven to 400°F (200°C).

- Pat the cod fillets dry, season with salt and pepper, and place them on top of the vegetables.
- Drizzle cod with olive oil and sprinkle with lemon zest.
- Bake for about 20 minutes until the cod flakes easily with a fork.
- Remove from oven, squeeze lemon juice over the top, and garnish with parsley before serving.
