Step-by-Step Instructions for Lemon Raspberry Swirl Bars
  1. Preheat your oven to 350°F (175°C) while preparing an 8×8-inch baking dish. Grease lightly with butter or line with parchment paper.
  2. In a medium bowl, combine the all-purpose flour, granulated sugar, and salt. Stir in the melted butter, followed by the large egg and vanilla extract until smooth.
  3. Transfer the prepared batter into the greased or lined baking dish and spread evenly across the bottom.
  4. In a separate bowl, mash the fresh raspberries gently with a fork until slightly chunky. Mix in the fresh lemon juice and lemon zest.
  5. Drop spoonfuls of the raspberry mixture over the top of the batter and swirl gently with a knife.
  6. Place the baking dish in the preheated oven and bake for 25-30 minutes until the edges are golden brown.
  7. Let the bars cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Dust with powdered sugar before serving.
