Step-by-Step Instructions
  1. Prepare the cheese by cutting the fresh mozzarella into ½ inch thick slices and patting them dry.
  2. Shape the dough into a rectangle about 9 x 13 inches on a floured surface and transfer it onto parchment paper.
  3. Make the brine by combining olive oil, a splash of water, chopped parsley, grated garlic, lemon zest, lemon juice, salt, and black pepper in a jar. Shake until emulsified.
  4. Dimple the dough and drizzle the brine over it. Distribute mozzarella slices evenly on top.
  5. Bake in a preheated oven at 475°F (245°C) for 8 to 10 minutes or until the cheese is bubbly and the crust is golden-brown.
  6. Serve by drizzling fresh lemon juice and sprinkling grated parmesan and parsley on top.
