- Prepare the cheese by cutting the fresh mozzarella into ½ inch thick slices and patting them dry.
- Shape the dough into a rectangle about 9 x 13 inches on a floured surface and transfer it onto parchment paper.
- Make the brine by combining olive oil, a splash of water, chopped parsley, grated garlic, lemon zest, lemon juice, salt, and black pepper in a jar. Shake until emulsified.
- Dimple the dough and drizzle the brine over it. Distribute mozzarella slices evenly on top.
