Ingredients
  

Tofu
  • 16 oz extra-firm tofu Freezing and pressing can enhance texture.
  • 2 tbsp cornstarch Helps create a crispy coating.
Asparagus
  • 1 bunch asparagus Trim tough ends.
  • 2 tbsp nutritional yeast Adds umami flavor.
Sauce
  • 1 lemon lemon juice & zest Essential for flavor.
  • 1 tsp cracked black pepper Provides spice.
  • 1/4 tsp red pepper flakes Optional for extra heat.
  • 2 cloves garlic Minced for flavor.

Method
 

Prep
  1. Preheat oven to 425°F (220°C). Trim asparagus ends, mix with salt, pepper, nutritional yeast, lemon juice, and olive oil, then roast for 12-15 minutes until tender.
  2. Slice tofu into cubes, coat with a mixture of cornstarch, salt, and pepper.
Cook
  1. In a skillet, heat olive oil and cook tofu until golden brown on all sides, about 3-5 minutes per side.
  2. Remove tofu, sauté garlic and red pepper flakes in the same skillet, then add lemon juice and zest, simmering for 2-3 minutes.
  3. Return tofu to skillet, tossing gently to coat.
  4. Serve with roasted asparagus and garnish with lemon zest.

Notes

For a crispier tofu, freeze and press it before cooking. Optional to experiment with other veggies like broccoli or kale.
