  • 1 cup Dark Brown Soft Sugar Can replace with light brown sugar
  • 2 medium Eggs (lightly beaten) At room temperature
  • 1 tbsp Vanilla Extract Imitation can be used
  • 1.5 cups Self-Raising Flour Or 1 cup flour + 1.5 tsp baking powder
Decoration
  • 1 cup Orange Fondant Icing Or colored buttercream
  • 0.5 cup Yellow Fondant Icing Edible gel colors can enhance it
  • 2 cups Icing Sugar (sifted) Substitution not recommended
  • 1 tbsp Blue Food Colouring Gel Can substitute with natural food coloring

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line a cupcake tray with colorful liners.
  2. In a large bowl, mix self-raising flour, dark brown soft sugar, and a pinch of salt.
  3. Cream together softened butter and remaining dark brown sugar until light and fluffy.
  4. Add eggs, spiced rum, and vanilla extract to the mixture, then beat until smooth.
  5. Gradually fold dry ingredients into the wet mixture until just combined.
  6. Gently fold in the raisins until evenly distributed.
  7. Fill cupcake liners two-thirds full and bake for 20-25 minutes.
  8. Cool in the tray for 5 minutes before transferring to a wire rack to cool completely.
Decoration Instructions
  1. Once cooled, decorate with frosting and add fondant tentacles for a whimsical touch.
