Preparation Steps
- Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- In a large mixing bowl, combine ground meat, breadcrumbs, egg, jerk seasoning, green onions, garlic, salt, and pepper. Mix gently until just combined.
- Shape the mixture into 1 to 1.5 inch meatballs and arrange them on the prepared baking sheet.
- Bake the meatballs for 18–20 minutes until golden and cooked through.
- While meatballs are baking, heat olive oil in a skillet. Add onion, garlic, and ginger, sautéing until onion is translucent.
- Stir in curry powder and allspice, cooking for 30 seconds to enhance flavor.
- Pour in coconut milk, add brown sugar, salt, and pepper, and bring to a gentle simmer for 5-7 minutes.
- Add baked meatballs to the sauce and simmer for an additional 5–10 minutes.
- Squeeze lime juice before serving and garnish with cilantro and sliced chili, if desired.
