  • 2 Eggs can substitute with flaxseed meal as needed
  • 1 cup Greek Yogurt or sour cream for moisture
  • 2 cups Fresh Peaches diced
  • 1 tsp Vanilla Extract
For the Crumb Topping
  • 1/4 cup Melted Butter for mixing with sugars
  • 1/4 cup Brown Sugar for sweetness
  • 1/2 cup All-Purpose Flour or whole wheat
  • 1 tsp Ground Cinnamon for enhanced flavor

Method
 

Instructions
  1. Preheat the oven to 350°F and line muffin tins with paper liners.
  2. In a large bowl, mix the dry ingredients: flour, baking powder, salt, granulated sugar, and brown sugar.
  3. In another bowl, whisk the wet ingredients: melted butter, eggs, Greek yogurt, and vanilla extract.
  4. Combine the wet mixture with the dry ingredients, stirring until just combined.
  5. Fold in diced fresh peaches until evenly distributed.
  6. Prepare the crumb topping by mixing melted butter, brown sugar, flour, and cinnamon until crumbly.
  7. Fill muffin cups two-thirds full with batter and sprinkle crumb topping generously.
  8. Bake for 20-25 minutes until golden and a toothpick comes out clean.
  9. Cool muffins in the tin for 5-10 minutes before transferring to a wire rack.
