Ingredients
  

For the Wraps
  • 1 package Coleslaw Mix Use pre-packaged for convenience.
  • 1 cup Shredded Carrots Fresh or pre-shredded.
  • 1/2 cup Roasted Peanuts Can substitute with cashews or sunflower seeds.
  • 1/4 cup Cilantro Optional; may substitute with parsley.
  • 2 cups Cooked Chicken Breasts Grill, sauté or use rotisserie.
  • 4 large Tortillas Opt for flour or lettuce wraps.
For the Peanut Sauce
  • 2 tablespoons Honey Can replace with maple syrup for vegan.
  • 2 tablespoons Oil Olive or vegetable.
  • 1/2 cup Peanut Butter Almond or cashew butter can be substituted.
  • 2 tablespoons Rice Vinegar Can use apple cider vinegar.
  • 2 tablespoons Soy Sauce Tamari or coconut aminos for gluten-free.
  • 1 teaspoon Sesame Oil Omit or substitute with olive oil if needed.
  • 1 teaspoon Pepper Adjust to taste.
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Crushed Red Pepper Flakes Optional for spiciness.
  • 1 tablespoon Fresh Ginger May use ground ginger if fresh is unavailable.
  • 1 clove Garlic Can substitute with garlic powder.

Method
 

Peanut Sauce Preparation
  1. In a medium bowl, combine peanut butter, honey, soy sauce, rice vinegar, sesame oil, crushed red pepper flakes, minced garlic, and fresh ginger. Whisk until smooth, about 2-3 minutes. Add warm water if too thick.
Cook Chicken
  1. Season cooked chicken breasts with salt and pepper. Grill, sauté, or bake at 375°F (190°C) for 20-25 minutes until cooked through. Let rest, then slice into strips.
Mix Coleslaw
  1. In a large bowl, mix coleslaw mix, shredded carrots, chopped cilantro, and roasted peanuts. Drizzle with peanut sauce and toss until coated.
Assemble Wraps
  1. Heat tortillas in the microwave for 15-20 seconds. Lay flat and add sliced chicken and coleslaw mixture to the center. Roll tightly.
Serve
  1. Slice wraps in half diagonally. Serve with extra peanut sauce on the side.
