- Preheat your oven to 200°C (400°F). Gather your ingredients in the meantime.
- In a large mixing bowl, combine ground chicken, egg, breadcrumbs, Parmesan cheese, minced garlic, parsley, onion powder, paprika, salt, and pepper. Mix until just combined.
- Form medium-sized balls, about the size of golf balls, and place them on a parchment-lined baking tray.
- Bake chicken bombs in the preheated oven for 20-25 minutes until golden and fully cooked (internal temperature of 75°C or 165°F).
- While the chicken bombs are baking, melt butter in a saucepan over medium heat. Whisk in flour to create a roux, then add milk gradually while stirring. Cook until sauce thickens, then stir in Parmesan, mozzarella, salt, pepper, and a pinch of nutmeg.
- Once chicken bombs are out of the oven, place them in a casserole dish and pour the creamy Parmesan sauce over the top. Broil for 3-5 minutes until bubbly and slightly golden.
