Ingredients
  

For the Steak Marinade
  • 1 pound Ribeye Steak Thinly sliced
  • 1/4 cup Soy Sauce
  • 2 tablespoons Gochujang Paste Adjust based on heat preference
  • 1 tablespoon Minced Ginger Optional but recommended
  • 1 tablespoon Light Brown Sugar Can be swapped for honey or agave syrup
  • 2 tablespoons Rice Wine Can be omitted
  • 3 cloves Garlic Minced
  • 1/2 teaspoon Black Pepper Adjust to taste
  • 1/2 cup Grated Apple Can substitute with pear or omit
  • 2 tablespoons Toasted Sesame Oil
For the Sandwich Assembly
  • 1 tablespoon Oil Any neutral oil for cooking
  • 1 cup Bell Peppers (Red & Yellow) Sliced
  • 4 slices Thick Slices of Bread Use crusty types like sourdough or ciabatta
  • 2 tablespoons Salted Butter For buttering bread
  • 2 tablespoons Sesame Seeds Optional
  • 1 cup Mature Cheddar Cheese Shredded
  • 1/4 cup Red Onion Thinly sliced, optional
  • 1/4 cup Jalapenos Sliced, adjust quantity for heat
  • 2 tablespoons Spring Onions (Scallions) Chopped, optional for garnish
  • 1/2 cup Mayonnaise Choose your favorite brand
  • 1 clove Minced Garlic (for Mayo)
  • 2 tablespoons Sweet Chili Sauce Optional for mayo

Method
 

Preparation and Cooking
  1. Start by freezing the ribeye steak for about 30 minutes. Slice thinly into strips (about 2mm thick).
  2. In a mixing bowl, whisk together soy sauce, gochujang, minced ginger, light brown sugar, rice wine, minced garlic, black pepper, grated apple, and sesame oil. Marinate steak for 30 minutes.
  3. Heat oil in a skillet over high heat. Add marinated steak and cook for 4-5 minutes until caramelized. Drain excess liquid.
  4. Sauté bell peppers in the same skillet for 2-3 minutes until softened.
  5. Butter one side of each bread slice. On unbuttered sides, layer sautéed peppers, cooked steak, sesame seeds, cheese, red onion, jalapenos, and scallions. Top with another slice of bread (buttered side out).
  6. Grill the sandwich over low to medium heat for 2-3 minutes on each side until golden brown and cheese is melted.
  7. Mix mayonnaise with minced garlic for garlic mayo. Drizzle over sandwich before serving, with sweet chili sauce if desired.
