  • 8 ounces Dark Chocolate Coarsely chop for easier melting
  • 1 cup Heavy Cream Half-and-half can be a lighter substitute

Method
 

Preparation Steps
  1. Preheat your oven to 350ºF (175ºC) and prepare your springform pan.
  2. Toast walnut halves on a baking sheet for about 5 minutes, then process into fine crumbs.
  3. Combine processed walnuts, flour, powdered sugar, and salt in a mixing bowl.
  4. Incorporate cold, cubed butter into dry ingredients until resembling coarse meal.
  5. Press dough into the springform pan and bake for 15-20 minutes until golden brown.
  6. Poach pear halves in a mixture of Moscato wine and split vanilla bean for 20-25 minutes.
  7. Prepare ganache by melting dark chocolate with heavy cream over low heat.
  8. Pour ganache into cooled crust and arrange poached pears on top.
  9. Chill tart in the refrigerator for at least 1 hour before serving.
  10. Serve slightly warm with whipped cream or vanilla ice cream.
