- Preheat your oven to 350°F (175°C) and grease your springform pan.
- Combine graham cracker crumbs and sugar, then add melted butter and mix until coated. Press into the pan and bake for 7 minutes.
- Beat cream cheese until smooth, then add sugar, sour cream, and vanilla, mixing until smooth.
- Whisk eggs separately, then add one at a time to the mixture at low speed. Mix until just combined.
- Gently tap the bowl against the countertop to release air bubbles.
- Pour the filling over the crust and bake at 325°F (160°C) for 30 minutes, then at 250°F (120°C) for 45 minutes.
