  • 1 pound chicken breast diced
  • 1 cup matchstick carrots or shredded carrots
  • 1/2 cup diced green onion save tops for garnish
  • 8 ounces rice noodles or thin pasta
  • 1 cup zucchini or bell pepper
  • 1 cup bean sprouts can omit if not available

Step-by-Step Instructions
  1. In a medium bowl, whisk together the sauce ingredients.
  2. Place the chicken breast in the Instant Pot, pour the sauce over, and top with carrots and green onions.
  3. Secure the lid and set to Manual High Pressure for 4 minutes. Allow a Natural Pressure Release for 5 minutes.
  4. Cook the rice noodles according to package instructions, usually about 4-6 minutes.
  5. Stir in zucchini, bean sprouts, and red bell pepper into the Instant Pot and steam for about 3 minutes.
  6. Toss the drained noodles with the mixture in the Instant Pot until well coated.
