Ingredients

For the Pudding
  • 2 whole ripe avocados Choose very ripe avocados for maximum creaminess and flavor.
  • 1/2 cup unsweetened cacao powder Cocoa powder can be used as a substitute.
  • 1/2 cup unsweetened almond milk Adjusts the pudding's consistency; can swap for coconut milk.
  • 1/4 cup maple syrup Naturally sweetens the pudding; sugar-free maple syrup can be used.
  • 1 teaspoon pure vanilla extract Enhances the overall flavor profile.
  • 1 pinch salt Balances sweetness and elevates flavor; optional.

Equipment

  • Food Processor

Method

Step-by-Step Instructions
  1. Gather the ripe avocados, cacao powder, almond milk, maple syrup, vanilla extract, and optional salt. Cut avocados in half, remove pits, and scoop flesh into the food processor.
  2. Add cacao powder, almond milk, maple syrup, and vanilla extract to the food processor with avocados. Blend on high for about 30 seconds.
  3. Scrape down the sides with a spatula, then blend again for an additional 30 seconds until the mixture is silky and smooth.
  4. Taste the pudding and adjust sweetness or thickness. Add more almond milk for a thinner texture or maple syrup for extra sweetness, blending again for 15 seconds.
  5. Serve immediately in bowls or refrigerate for at least 30 minutes if you prefer it chilled.
