Preparation
- Combine ground beef or lamb, grated onion, minced garlic, yogurt, tomato paste, salt, pepper, cumin, paprika, oregano, and olive oil in a mixing bowl. Mix until cohesive and sticky, about 3-5 minutes.
- Divide meat mixture into five equal portions. Spread one portion between two sheets of parchment paper into a thin rectangle, about 1/4 inch thick.
- Remove the top sheet of parchment and tightly roll the meat sheet into a compact log, sealing the ends.
