Method
 

Preparation
  1. Combine ground beef or lamb, grated onion, minced garlic, yogurt, tomato paste, salt, pepper, cumin, paprika, oregano, and olive oil in a mixing bowl. Mix until cohesive and sticky, about 3-5 minutes.
  2. Divide meat mixture into five equal portions. Spread one portion between two sheets of parchment paper into a thin rectangle, about 1/4 inch thick.
  3. Remove the top sheet of parchment and tightly roll the meat sheet into a compact log, sealing the ends.
  4. Preheat oven to 200°C (400°F). Place rolled meat log on a baking tray lined with parchment paper and bake for 20-25 minutes until golden brown.
  5. Let the doner kebab rest for 5 minutes before slicing thinly or shredding with forks.
  6. Assemble kebabs with warm pita or tortilla, sliced meat, toppings (lettuce, red onion, pickles), and sauces (tzatziki or tahini).
