Method

Dough Preparation
  1. In a large mixing bowl, combine all-purpose flour, granulated sugar, active dry yeast, and salt.
  2. In a separate bowl, gently warm the milk and melt the butter together until just lukewarm.
  3. Whisk in the eggs and vanilla extract, then pour this mixture into the dry ingredients.
  4. Mix until a dough forms, and knead for about 8-10 minutes until the dough is smooth and elastic.
First Rise
  1. Place the kneaded dough into a greased bowl, covering it with a damp cloth or plastic wrap.
  2. Let it rise in a warm place for about 1 hour, or until it has doubled in size.
Custard Making
  1. While the dough is rising, prepare the custard filling by combining your chosen custard ingredients in a saucepan.
  2. Whisk continuously over medium heat until the mixture thickens, about 5-7 minutes.
  3. Once thickened, remove from heat and allow it to cool slightly.
Shaping
  1. After the dough has completed its first rise, punch it down gently to release any air.
  2. Roll it out onto a floured surface, shaping it into a rectangle.
  3. Cut the dough into equal squares, placing a generous spoonful of custard in the center of each piece.
  4. Carefully fold the edges over to seal the custard inside.
Second Rise
  1. Place the shaped custard-filled dough balls on a baking sheet lined with parchment paper.
  2. Cover them lightly and let them rise again for about 30 minutes.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. Once preheated, bake the filled sweet breads for approximately 20 minutes, or until golden brown.
Cooling
  1. After baking, remove the custard-filled sweet breads from the oven and allow them to cool on wire racks.
  2. Let them rest for about 10-15 minutes before dusting with powdered sugar.
