Step-by-Step Instructions
  1. Heat 1/2 cup of coconut milk over medium heat until bubbling and thickened, about 3-5 minutes.
  2. Add red curry paste and fish sauce; stir for 1-2 minutes until fully combined and fragrant.
  3. Incorporate remaining coconut milk and 1 cup of water, stir, and bring to a simmer for 2-3 minutes.
  4. Introduce pumpkin chunks to the mixture and let simmer on low for 10-15 minutes until tender.
  5. Stir in pork and kaffir lime leaves, increase heat to medium, and simmer for an additional 5-7 minutes.
  6. Adjust sweetness with palm sugar and add sweet basil and chili peppers, simmer for another minute.
  7. Serve hot with jasmine rice or roti.
