- Preheat your oven to 400°F (200°C) and coat a 9x13 baking dish with cooking spray.
- In a large skillet, heat 1 tablespoon of avocado oil over medium-high heat. Sauté the diced yellow onion for about 2 minutes. Add the ground beef and cook for 8-10 minutes until browned. Drain excess fat and transfer to the baking dish.
- Add remaining avocado oil to the skillet and cook the chopped mushrooms for 2-4 minutes until soft. Stir in flour to create a roux, then gradually whisk in broth and let thicken for 3-5 minutes. Season with salt, garlic powder, onion powder, and black pepper.
- Pour the mushroom sauce over the beef in the baking dish. Fold in the lentils, mixed vegetables, and 1 cup of shredded cheese. Add cauliflower rice and mix well.
- Spread the mixture evenly in the baking dish. Arrange tater tots on top and sprinkle with remaining cheese.
- Bake for 35-40 minutes, until bubbly and golden brown.
