  • 4 links Irish Sausages or beef/chicken sausages for variation
  • 200 grams Smoked Bacon or unsmoked for milder taste
  • 2 medium Onions yellow onions recommended
  • 4 medium Potatoes waxy potatoes preferred
  • 2 medium Carrots optional; can replace with parsnips
For the Broth
  • 1 cup Beer or White Wine optional; can use non-alcoholic beer
  • to taste Salt adjust according to bacon and sausage saltiness
  • to taste Pepper adjust as needed

Method
 

Preparation Steps
  1. Slice the Irish sausages and smoked bacon into bite-sized pieces, roughly 1-inch thick.
  2. Chop the onions and peel the potatoes before cutting them into evenly sized chunks.
  3. If using, slice the carrots as well and gather all your ingredients.
  4. In a large pot, layer the sausages, bacon, onions, and potatoes.
  5. If adding carrots or other vegetables, include them now.
  6. Pour enough water or broth to cover the ingredients by at least an inch.
  7. Optionally add beer or white wine for richer flavor.
  8. Stir gently, being careful not to break the potatoes.
  9. Sprinkle salt and pepper over the pot, adjusting to taste.
  10. Bring to a gentle simmer over medium heat.
  11. Once simmering, reduce heat to low, cover, and simmer for about one hour.
  12. Check for tenderness of potatoes with a fork; they should hold their shape.
  13. Ladle into bowls and serve with soda or crusty brown bread.
