  • 1 teaspoon Dried Thyme Oregano can be a substitute
  • 2 leaves Bay Leaves Remove before serving
  • 3 tablespoons Cornstarch Mixed with water to thicken the gravy
  • Fresh Parsley For garnish
  • Salt and Black Pepper To taste

Step-by-Step Instructions
  1. Cut the beef chuck roast into 1.5-inch cubes and season with salt and black pepper. Cube the Yukon Gold potatoes, chop the carrots, dice the yellow onion, and mince the garlic.
  2. In a crockpot, layer the diced onions, followed by the seasoned beef cubes, cubed potatoes, chopped carrots, and minced garlic.
  3. Pour in the beef broth, stir in the tomato paste and Worcestershire sauce, and sprinkle in the dried thyme and tuck in the bay leaves.
  4. Cover and cook on LOW for 7 to 8 hours or on HIGH for 4 to 5 hours without lifting the lid.
  5. About 30 minutes before serving, stir in the frozen peas and mix cornstarch with water to create a slurry, pour it into the stew, and let simmer until thickened.
  6. Remove bay leaves, adjust seasoning, garnish with parsley, and serve hot.
