For the Veggies

Cooking Instructions
  1. Preheat a nonstick pan over medium heat for about 2–3 minutes. Gather all ingredients.
  2. Cut the salmon into four equal portions. Drizzle the pan with olive oil, and place salmon skin-side down. Season with salt and pepper, and cook for about 5 minutes until the skin is crispy.
  3. Carefully flip the salmon and sauté for an additional 2 minutes, covering the pan to retain moisture. Transfer to a plate and cover with foil.
  4. In the same pan, lower heat to low and add butter. Once melted, add chopped garlic and sauté for about 1 minute.
  5. In a small bowl, whisk together cornstarch and 1 tablespoon of 2% milk until smooth. Pour remaining milk into the pan, add the slurry while stirring continuously, and cook until sauce thickens slightly.
  6. Add grated parmesan cheese, chopped spinach, sun-dried tomatoes, cherry tomatoes, salt, and pepper to the thickened sauce. Stir together and cook for an additional 2–3 minutes.
  7. Return sautéed salmon to the pan, nestle it into the creamy sauce, heat briefly until warmed through, and serve over whole wheat linguine or your favorite pasta.
