- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the thawed puff pastry on a lightly floured surface to about ⅛ inch thickness.
- Cut the rolled pastry into rectangles, approximately 3x5 inches in size.
- Spread a thin layer of Dijon mustard on one half of each pastry rectangle.
- Layer a slice of deli ham followed by your choice of cheese on top of the mustard.
- Fold the pastry over to create a pocket and pinch the edges to seal tightly.
- Place the sealed sticks on the prepared baking sheet, spaced apart.
- Brush the tops of the sticks with the beaten egg.
- Bake in the preheated oven for 15-20 minutes until golden brown.
- Allow the sticks to cool slightly before serving.
