  • 1 pound Ground Chicken can swap for ground turkey or tofu
  • 2 medium Zucchini diced
  • 1 cup Rice brown rice for more nutrition
  • 1 medium Onion diced; yellow or sweet onion recommended
  • 2 cloves Garlic freshly minced preferred
  • 1 cup Chicken Broth low-sodium preferred
  • 2 tablespoons Olive Oil can use avocado oil
For Seasoning
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Black Pepper freshly cracked recommended
  • 1 teaspoon Paprika adds smoky flavor
  • 1 teaspoon Cumin for unique flavor

Method
 

Cooking Steps
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat for 1-2 minutes.
  2. Add 1 pound of ground chicken and cook for 5-7 minutes until browned.
  3. Stir in 1 diced onion and 2 minced garlic cloves, sautéing for 3-4 minutes.
  4. Add 2 medium diced zucchinis and cook for an additional 2 minutes.
  5. Mix in 1 cup of rice and 1 cup of chicken broth along with salt, pepper, paprika, and cumin.
  6. Bring to a boil, reduce heat to low, cover, and simmer for 15-20 minutes.
  7. Remove from heat, cover, and let it rest for 5 minutes.
  8. Fluff with a fork, garnish with parsley, and serve warm.
