Ingredients
  

For the Beef
  • 1 pound Lean Ground Beef Choose 85/15 or 90/10
  • 1 tablespoon Neutral Oil Canola or vegetable oil
  • 2 tablespoons Taco Seasoning Blend of spices
For the Base
  • 1 cup Long-Grain White Rice Fluffy foundation
  • 2 cups Water or Broth Enhances rice flavor
For the Fillings
  • 1 can Black Beans Rinse and drain (425g)
  • 1 cup Sweet Corn Canned or frozen
  • 1 cup Diced Tomatoes Firm and finely chopped
  • 1 cup Iceberg Lettuce Shredded
For the Toppings
  • 1/2 cup Full-Fat Sour Cream For creaminess
  • 1/4 cup Fresh Cilantro Finely chopped

Method
 

Cooking Steps
  1. Rinse the rice under cold water until it runs clear. In a saucepan, combine the rinsed rice with 2 cups of water. Bring to a boil, reduce heat, cover and simmer for 15-18 minutes.
  2. Heat a tablespoon of neutral oil in a large skillet. Add 1 pound of lean ground beef, cook, and break apart. Brown for about 5-7 minutes until fully crumbled.
  3. Sprinkle taco seasoning over the cooked beef. Add 1/4 cup of water, stir, lower heat to medium, and simmer for 2-3 minutes until well-coated.
  4. In serving bowls, start with a base of cooked rice. Layer with seasoned ground beef, black beans, sweet corn, and diced tomatoes. Top with shredded iceberg lettuce.
  5. Add a generous dollop of sour cream and sprinkle with chopped cilantro before serving.
