Cooking Steps
- Rinse the rice under cold water until it runs clear. In a saucepan, combine the rinsed rice with 2 cups of water. Bring to a boil, reduce heat, cover and simmer for 15-18 minutes.
- Heat a tablespoon of neutral oil in a large skillet. Add 1 pound of lean ground beef, cook, and break apart. Brown for about 5-7 minutes until fully crumbled.
- Sprinkle taco seasoning over the cooked beef. Add 1/4 cup of water, stir, lower heat to medium, and simmer for 2-3 minutes until well-coated.
- In serving bowls, start with a base of cooked rice. Layer with seasoned ground beef, black beans, sweet corn, and diced tomatoes. Top with shredded iceberg lettuce.
- Add a generous dollop of sour cream and sprinkle with chopped cilantro before serving.
