  • 1 medium Yellow Onion can replace with shallots or leeks
  • 2 tablespoons Taco Seasoning homemade seasoning can be used
  • 2 medium Sweet Potatoes can substitute with butternut squash or carrots
  • 2 tablespoons Olive Oil avocado or coconut oil can be used
  • 1 teaspoon Paprika smoked paprika can be substituted
  • 1 teaspoon Garlic Powder fresh garlic can be used for stronger aroma
  • 1/2 teaspoon Cinnamon omit if not fond of sweet spices
  • to taste Salt

For the Toppings
  • 1 medium Avocado substitute with sliced olives or omit
  • 1 cup Cottage Cheese Greek yogurt can be used as an alternative
  • 1/4 cup Hot Honey regular honey with red pepper flakes can be used as substitute

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Wash and dice sweet potatoes into uniform cubes.
  2. Toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on a baking sheet and roast for 40–45 minutes.
  3. Heat a skillet over medium heat, add olive oil, and sauté diced yellow onion until translucent. Then add ground beef and taco seasoning, cooking until browned, roughly 8-10 minutes.
  4. Assemble each bowl with a layer of roasted sweet potatoes and seasoned ground beef.
  5. Add cottage cheese and sliced avocado, then drizzle hot honey over the top.
  6. Serve immediately while warm, optionally with garnishes like fresh cilantro or lime wedges.
