- Whisk together juice and zest of two limes with ¼ cup of honey until fully combined. Set aside to let flavors meld.
- Preheat grill to high, about 400°F. Slice watermelon into 1-inch thick triangle pieces, leaving the rind intact.
- Brush both sides of each watermelon piece generously with the lime mixture. Grill for 2-3 minutes on each side until grill marks appear.
- Remove grilled watermelon from heat, sprinkle with chopped cilantro and drizzle with lime juice if desired. Serve immediately.
