For the Salad
  • 5 cups Mixed Greens Use arugula, spinach, or romaine.
  • 1 cup Corn Fresh grilled corn is optimal; canned is quick.
  • 1 cup Cherry Tomatoes Any bite-sized variety works.
  • 1/2 cup Red Onion Thinly sliced; sweet onion can be an alternative.
  • 1/2 cup Gorgonzola Cheese Can substitute with feta.
  • 1/2 cup Walnuts or Pecans Omit for nut-free diets.
  • 1 medium Avocado Optional for extra creaminess.

Method
 

Marinating and Grilling
  1. In a medium bowl, whisk together olive oil, balsamic vinegar, salt, black pepper, garlic powder, and smoked paprika. Add flank steak and let marinate for 15-20 minutes.
  2. Preheat grill to high heat. Cook marinated flank steak for 4-5 minutes on each side until medium-rare. Let it rest for 5 minutes before slicing.
  3. Brush corn with olive oil and grill for 8-10 minutes until charred. Remove from grill, cool slightly, and cut kernels off the cob.
Assembling the Salad
  1. In a large salad bowl, toss mixed greens, cherry tomatoes, red onion, and grilled corn kernels together.
  2. Add sliced steak and crumble Gorgonzola cheese. Drizzle with dressing just before serving.
