Cooking Steps
- In a large skillet, heat over medium heat and add 1 pound of ground beef. Cook for about 7-10 minutes, breaking it apart with a spatula until it’s fully browned and no longer pink.
- Return the skillet with the cooked ground beef to the stove. Pour in a tablespoon of olive oil, and sprinkle with salt, pepper, and a squeeze of fresh lemon juice. Stir well for about 2-3 minutes to ensure the beef is evenly coated in the seasoning.
- While the beef is cooking, prepare the rice according to package instructions, usually taking about 15 minutes.
- Wash and chop the fresh cucumbers and tomatoes. Dice the cucumbers into small bite-sized pieces and slice the tomatoes into quarters.
- To assemble the bowls, place a scoop of fluffly rice in each bowl, then top with seasoned ground beef, followed by cucumbers and tomatoes.
- Finish by spooning the tzatziki sauce over the dish.
- Serve warm and enjoy!
