For the Pasta and Veggies
  • 8 oz Fettuccine Substitute with any pasta shape.
  • 7 oz Spinach Feel free to swap with kale or Swiss chard.
For the Protein
  • 1 lb Salmon, cut into 1-inch cubes Consider using skinless salmon.
For Garnish
  • 1/2 Lemon Juice Brightens flavors.
  • 3 tbsp Fresh Parsley, chopped Can substitute with chives or basil.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and bring a large pot of salted water to a boiling point.
  2. Thinly slice the shallots and cut the salmon into 1-inch cubes. Measure out the spinach and Boursin cheese.
  3. In a baking dish, drizzle olive oil and layer in the spinach and shallots. Create a well for the Boursin cheese and surround it with seasoned salmon cubes.
  4. Cover the dish and bake for 20-25 minutes until the salmon is opaque and flakes easily.
  5. Cook the fettuccine in the boiling water until al dente, about 8-10 minutes, reserving 1 cup of the starchy water.
  6. After baking, mash the salmon with Boursin cheese, then add the fettuccine and reserved water to achieve the desired creaminess.
  7. Add lemon juice and season to taste with salt and pepper. Toss gently and sprinkle fresh parsley on top.

Notes
