- In a large skillet, heat olive oil over medium heat. Sauté garlic, onion, bell peppers, cilantro, and jalapeño for about 5 minutes until tender.

- In the same skillet, add more olive oil and the diced potatoes. Sauté until golden brown and tender, about 10-12 minutes.
- Warm tortillas, then assemble by adding chicken mixture, potatoes, cheese, and salsa on each tortilla. Roll tightly.
