Step-by-Step Instructions
  1. In a large skillet, heat olive oil over medium heat. Sauté garlic, onion, bell peppers, cilantro, and jalapeño for about 5 minutes until tender.
  2. Add ground chicken, break it apart as it cooks, and season with cumin, salt, and pepper. Cook until chicken is no longer pink, about 6-8 minutes.
  3. In the same skillet, add more olive oil and the diced potatoes. Sauté until golden brown and tender, about 10-12 minutes.
  4. Warm tortillas, then assemble by adding chicken mixture, potatoes, cheese, and salsa on each tortilla. Roll tightly.
