  1. Preheat your oven to 350°F (175°C) and line a 9x5-inch loaf pan with parchment paper.
  2. Blend the old-fashioned rolled oats in a high-speed blender until they reach a fine flour-like consistency, about 30 seconds.
  3. Pour the oat flour into the blender and add the full-fat cottage cheese, large eggs, olive oil, baking powder, and sea salt. Blend for 45-60 seconds until smooth.
  4. Pour the smooth batter into the prepared loaf pan and smooth the top with a spatula.
  5. Bake in the oven for 50 to 55 minutes until the top is golden brown and a toothpick comes out clean.
