  • 1 medium Red Bell Pepper optional
  • 3 cloves Garlic fresh is best, powdered can be used in a pinch
  • 1 can Diced Tomatoes (undrained) fresh tomatoes can be used, adjusting liquid
  • 8 ounces Tomato Sauce swap with marinara sauce for added herbs
  • 1 can Kidney Beans other beans like black beans can be used
  • 1 can Pinto Beans any beans on hand can be used
  • 1.5 cups Long-Grain White Rice or brown rice/quinoa with adjusted cooking times
  • 3 cups Chicken Broth vegetable broth works for vegetarian option
For Spice & Seasoning
  • 1 teaspoon Chili Powder can be replaced with paprika
  • 1 teaspoon Smoked Paprika regular paprika can be used
  • 1 pinch Cayenne Pepper adjust for spice preference
  • 1 teaspoon Dried Oregano Italian seasoning can be substituted
  • to taste Black Pepper adjust to taste
  • to taste Salt adjust to taste

Step‑by‑Step Instructions for Flavorful Jailhouse Rice
  1. In a large pot, heat olive oil over medium heat. Add sliced smoked sausage and cook for 5-7 minutes until browned, then set aside.
  2. In the same pot, add diced onion and green bell peppers. Cook for 5-7 minutes until softened.
  3. Stir in minced garlic and sauté for 30 seconds until fragrant.
  4. Mix in diced tomatoes and tomato sauce, allowing to simmer for 2 minutes.
  5. Add rinsed kidney and pinto beans, mixing thoroughly and cooking for another 2-3 minutes.
  6. Add uncooked long-grain white rice to the pot, stirring to combine.
  7. Pour in chicken broth, increase heat to high, and bring to a boil.
  8. Once boiling, add chili powder, smoked paprika, oregano, cayenne pepper, salt, and black pepper.
  9. Fold the browned sausage back into the pot, reduce heat to low, cover, and let simmer for 20-25 minutes.
  10. Check the rice for doneness; if firm, cover and cook for an additional 5 minutes.
  11. Remove from heat and let sit covered for 5-10 minutes.
  12. Fluff the rice with a fork, serve hot, and garnish as desired.
