  • 1 packet Taco Seasoning Homemade can control spice levels
For the Vegetables
  • 1 head Cabbage Green or napa for different textures
For the Crunch and Creaminess
  • 2 cups Fritos Substitute with corn chips or tortilla strips
  • 1 cup Shredded Cheese Cheddar or Monterey Jack, or dairy-free alternatives
  • 1 cup Sour Cream Can substitute with Greek yogurt

Preparation
  1. Chop the cabbage into thin strips, dice the onion, and slice the bell pepper. Prepare all ingredients before cooking to simplify the process.
Cooking
  1. In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
  2. Add the diced onion and bell pepper to the skillet, stirring them into the cooked beef. Cook for about 3-4 minutes until the vegetables soften.
  3. Stir in the diced tomatoes and taco seasoning, mix well, and let simmer for about 5 minutes.
  4. Fold in the chopped cabbage, mixing thoroughly, and cook for another 3-5 minutes until slightly wilted.
  5. Remove from heat and top with Fritos and shredded cheese. Let sit for a minute to melt the cheese.
  6. Garnish with sour cream or Greek yogurt if desired, then serve warm.
