  • 2 tablespoons apple cider vinegar Bragg preferred
  • 3 tablespoons blueberries fresh for optimal flavor
  • 1 tablespoon monk fruit powder can substitute with honey
  • to taste salt
  • to taste pepper freshly ground is best
  • 1 tablespoon fresh lemon juice use fresh for best results

  • 6 cups spring mix can substitute with baby spinach or arugula
  • 1 cup walnuts toast before use for enhanced taste
  • 4 ounces goat cheese crumbled for even distribution

Preparation
  1. Step 1: Toast Walnuts - Heat a dry skillet over medium heat for 2 minutes. Add walnuts and toast for 5 minutes until fragrant and lightly browned. Transfer to a plate to cool.
  2. Step 2: Prepare Dressing - In a blender, combine olive oil, apple cider vinegar, blueberries, monk fruit powder, salt, pepper, and lemon juice. Blend on high for 30-45 seconds until smooth.
  3. Step 3: Assemble Salad - In a large bowl, place spring mix as the base. Scatter toasted walnuts, remaining blueberries, and crumbled goat cheese over the greens.
  4. Step 4: Dress Salad - Pour dressing over salad right before serving, toss gently to coat without sogginess.
