  • 1/2 cup fresh lemon juice fresh over bottled preferred
  • 1 clove garlic minced; garlic powder can substitute
  • 1 teaspoon Italian seasoning or individual herbs like oregano

Salad
  • 8 ounces dried pasta such as farfalle or rotini
  • 1 cup mozzarella pearls or cubed mozzarella
  • 1 cup grape tomatoes halved; cherry tomatoes can substitute
  • 1/2 cup fresh basil leaves torn or chopped; fresh parsley can substitute

Method
 

Preparation
  1. Whisk together the vinaigrette ingredients in a small bowl or jar until well combined.
  2. Bring a large pot of salted water to a boil and cook the pasta for 8-10 minutes, then drain and cool under cold water.
  3. In a large mixing bowl, combine cooled pasta, halved grape tomatoes, mozzarella pearls, and fresh basil.
  4. Drizzle vinaigrette over the pasta mixture, toss gently to coat, and adjust seasoning as needed.
  5. Refrigerate for 30 minutes to enhance flavors or serve immediately.
