- In a mixing bowl, combine pumpkin puree, coconut milk, brown sugar, vanilla extract, spices, salt, cornstarch, and maple syrup. Whisk until smooth.
- Unroll the filo pastry sheets carefully and keep covered with a damp towel.
- Brush a 9-inch pie dish with melted coconut oil.
- Layer 6-8 sheets of filo pastry into the pie dish, brushing each layer with melted coconut oil.
