Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine pumpkin puree, coconut milk, brown sugar, vanilla extract, spices, salt, cornstarch, and maple syrup. Whisk until smooth.
  3. Unroll the filo pastry sheets carefully and keep covered with a damp towel.
  4. Brush a 9-inch pie dish with melted coconut oil.
  5. Layer 6-8 sheets of filo pastry into the pie dish, brushing each layer with melted coconut oil.
  6. Pour the pumpkin filling over the layered filo sheets and spread evenly.
  7. Top with another 6-8 layers of filo pastry, brushing each with melted coconut oil.
  8. Trim and fold any excess filo over the edges of the pie and brush with melted coconut oil.
  9. Bake for 40-45 minutes until golden brown and firm in the center.
  10. Let cool for 15-20 minutes before slicing and serving.
