Ingredients
  

For the Pasta
  • 12 ounces Rotini Pasta or any short pasta like fusilli or penne
For the Salad
  • 8 ounces Mozzarella Pearls or feta for a tangier flavor
  • 6 ounces Genoa Salami or turkey salami, can be omitted for vegetarian
  • 1 cup Sliced Olives green olives or omit if not preferred
  • 1 medium Red Onion or green onions for milder flavor
  • 1 cup Cherry Tomatoes or regular tomatoes diced
  • 1 cup Flat-Leaf Parsley or basil, can be omitted
  • ½ cup Parmesan Cheese or Pecorino Romano
  • ½ cup Pepperoncinis omit for less heat
For the Dressing
  • cup Extra Virgin Olive Oil or any neutral oil
  • ¼ cup Red Wine Vinegar or apple cider vinegar
  • to taste Dried Herbs and Spices parsley, onion, basil, oregano, garlic salt, sugar, black pepper, mustard powder, crushed red pepper

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together the olive oil, red wine vinegar, and the juice of half a lemon. Add the dried herbs and spices, mix until smooth; set aside.
  2. In a large pot, bring salted water to a rolling boil. Add rotini and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  3. While the pasta cools, prepare your salad ingredients: quarter the salami, halve the tomatoes, and dice the onion. Chop parsley and measure out mozzarella, olives, and pepperoncinis.
  4. In a large bowl, combine cooled rotini pasta with half of the vinaigrette. Toss to coat.
  5. Fold in salami, mozzarella, olives, onion, tomatoes, pepperoncinis, and parsley. Pour remaining vinaigrette over the top and toss gently.
  6. Fold in Parmesan cheese, cover, and refrigerate for at least one hour before serving.
