Preparation Steps
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, pumpkin pie spice, and salt.
- In another bowl, mash the ripe bananas, then add pumpkin puree, eggs, and brown sugar. Mix until creamy.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Line your muffin tin and fill each muffin cup about two-thirds full with batter. Sprinkle sugar on top.
- Bake for 20-25 minutes until a toothpick comes out clean.
- Let the muffins cool in the tin for about 5 minutes before transferring to a wire rack.
