Ingredients
  

For the Broth
  • 4 cups chicken stock low-sodium preferred
  • 2 cups beef stock can substitute with vegetable broth
  • 2 cups water
For the Vegetables
  • 1 medium onion sliced thinly
  • 2 medium carrots cut into matchsticks
  • 4 stalks scallions chop greens for garnish
  • 1 cup mushrooms shiitake or button, sliced
For Seasoning
  • 2 tablespoons soy sauce low-sodium preferred
  • 1 teaspoon salt to taste
  • 1 teaspoon ground white pepper
  • 1 inch fresh ginger grated
For Garnish
  • 2 tablespoons cilantro chopped

Method
 

Directions
  1. Heat a medium pot over medium heat and add a splash of oil. Incorporate minced ginger and sauté for about 2 minutes until fragrant.
  2. Add ground beef, breaking it apart and cooking for about 5 minutes until browned.
  3. Stir in soy sauce, salt, white pepper, and grated ginger, mixing well.
  4. Add chicken stock, beef stock, and water. Bring to a gentle simmer.
  5. Add onion, carrots, scallions, and mushrooms. Simmer for at least 15 minutes.
  6. Garnish with cilantro and lemon wedges before serving.
